Holiday cookie recipe: Anzac Cookies

MAKES ABOUT 5 DOZEN

2 cups flour

2 cups sugar

2 cups old-fashioned oats

2 cups flaked coconut

2 cups chopped walnuts

1 cup butter

1/3 cup light corn syrup

1/4 cup water

2 teaspoons baking soda

Preheat oven to 350 degrees. Line baking sheets with parchment paper.

In a very large bowl, combine flour, sugar, oats, coconut and walnuts.

In a large saucepan, melt butter; add corn syrup and bring to a boil.

Microwave water until hot and add baking soda.

Add the water/baking soda mix to the butter/syrup mix. This will rise in the saucepan.

Pour this mixture into the large bowl of dry ingredients and mix together well.

Using a 2-inch cookie scoop, shape into balls. Bake on prepared baking sheets until golden brown, about 10 to 12 minutes.

Note: ANZAC stands for Australian and New Zealand Army Corps.
