Cal-a-Vie Health Spa Partners with Phifer Pavitt Wine for California Wine Month

Vista, Calif. – Experience the perfect blend of fitness and fun during California Wine Month at Cal-a-Vie Health Spa. From August 30 through September 2, the world-renowned destination spa will partner with celebrated Napa Valley vintner Suzanne Phifer Pavitt, of Phifer Pavitt Winery, to offer three special days of culinary delights, wine tastings and pairings. The resort’s own estate-grown wine, Château Cal-a-Vie, will also be featured.

With a French Provencal aesthetic and 200 rolling acres, Cal-a-Vie Health Spa sets the ideal stage for a world-class wine retreat in Southern California. Guests who book a stay between August 30 and September 2 will enjoy exceptional food and wine events which will enhance the Cal-a-Vie’s approach to lifelong, sustainable health.

Oenophiles will savor behind-the-scenes introductions into the art of wine by vintner Suzanne Phifer Pavitt, from the nuances of oak and its role in winemaking and aging, to the meticulous blending of wines from barrels to create the perfect glass. A seasonal menu with items plucked fresh from the Cal-a-Vie garden will be expertly crafted and prepared by Executive Chef Curtis Cooke to complement the wine pairings, enhancing the flavor, texture and taste of each dish.

The Cal-a-Vie wine event begins with a tasting introduction to Cal-A-Vie’s own estate grown wine, Château Cal-A-Vie, a blend of Cabernet Sauvignon, Cabernet Franc and Merlot grapes. On the following evenings, guests will be treated to several vintages of Phifer Pavitt Date Night Cabernet Sauvignon and Sauvignon Blanc, an elaborate three-course gourmet dinner complete with Phifer Pavitt pairings and conducted by Suzanne Phifer Pavitt, owner of Phifer Pavitt Wines.

In addition to experiencing exceptional food and wine events, Cal-a-Vie guests will enjoy a personally-tailored fitness program blending California fitness concepts, indulgent European-inspired spa treatments and a nutrition program based on locally sourced, organic and whole ingredients. The food and wine events will also provide an opportunity for guests to learn how to mindfully indulge in wine and fine foods without sacrificing their fitness and wellness goals. 

Guests will depart Cal-a-Vie with a refined palate, greater insight into balanced nutrition, and improved knowledge of taste and textural differences between younger and aged wines. A Schott Zwiesel crystal wine glass etched with “Date Night,” the proprietary name for the Phifer Pavitt wines, will be given to guests as a souvenir.

About Phifer Pavitt

Phifer Pavitt Wines is the realization of a dream of Suzanne Phifer Pavitt and Shane Pavitt, who over the course of several years of ‘date nights’ hatched the idea of their own Napa Valley winery. The Pavitts have created an eco-chic and very hip setting for their limited production wines—Cabernet Sauvignon and Sauvignon Blanc—in a board-and-batten façade barn, distinguished with stylish touches such as recycled baling-wire chandeliers, Wyoming snow fencing paneling, chalkboard-finished walls with sketches of the cowgirl character featured on the wine labels and a slab of black walnut suspended from the ceiling.
