之前post雲南小鍋米線食譜,有人話南記蕃茄湯都好正,想我試試複製這個湯底😆感覺好吸引!於是lunch time吃了幾次試味!食得出粒粒連皮蕃茄,而且加入油揚吸汁超正🥹回家將材料加加減減,得出這個偽南記蕃茄湯底食譜❤️配上春卷和墨魚丸賣相更加像餐廳呀🤣

❤️🔥自製南記蕃茄湯米線 📝食譜
烹調時間⏱30分鐘
🔸材料🔸
米線/任何麵 300g
蕃茄 4個切粒
乾蔥 3粒切碎
薑 3片
雞湯 200ml
水 600ml
芫茜、蔥
🔸調味料🔸
生抽 1茶匙
蠔油 1湯匙
日本茄汁 3湯匙
砂糖 1茶匙
鹽 半茶匙
🔸建議配料🔸
油揚/春卷/墨魚丸/生菜
🔹做法🔹
- 春卷和墨魚丸用滾水煮熟備用
- 下油開鍋,炒香乾蔥和薑片,加入蕃茄粒炒軟出汁
- 倒入雞湯和清水,煮沸後合蓋煮20分鐘;下調味料,試味(不同蕃茄和茄汁甜度不一樣,可加減砂糖份量)
- 加入米線、油揚和生菜煮熟,灑上蔥花和芫莤碎即成

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
Any noodles 300g
Tomatoes 4, diced
Shallots 3, minced
Ginger 3 slices
Chicken broth 200ml
Water 600ml
Cilantro, scallions
𝗦𝗲𝗮𝘀𝗼𝗻𝗶𝗻𝗴𝘀
Soy sauce 1 tsp
Oyster sauce 1 tbsp
Japanese tomato sauce 3 tbsp
Sugar 1 tsp
Salt 1/2 tsp
𝗦𝘂𝗴𝗴𝗲𝘀𝘁𝗲𝗱 𝘁𝗼𝗽𝗽𝗶𝗻𝗴𝘀
Fried tofu/spring rolls/squid balls/lettuce
𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀
- Cook spring rolls and squid balls in boiling water, set aside.
- Sauté minced shallots and ginger in oil. Add diced tomatoes and cook until soft and juicy.
- Add chicken broth, water, and seasonings. Simmer covered for 20 mins. Adjust sweetness if needed.
- Add noodles, fried tofu, and lettuce. Cook until noodles are done. Garnish with scallions and cilantro. Serve.
